“Cooked” must
Cooked grape must is a dense, viscous liquid with a deep brown color and a typical aroma and flavor of caramelized sugar. Cooked grape must is obtained by pressing grapes of the following species: Vitis Vinifera L., followed by clarification and filtration, then concentrated through slow direct cooking at atmospheric pressure, in compliance with Italian Law No. 238 of 2016. The cooking process intensifies the flavor of the grapes, making it ideal for the production of vinegars, condiments, desserts and gastronomic specialties.
